Ingredients
- 2 tbsp coconut oil
- 3 tbsp green curry paste
- 1 can (14 oz) coconut milk
- 1 cup vegetable broth
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup snap peas
- 1 cup broccoli florets
- 1 tbsp soy sauce
- 1 tbsp brown sugar
- Fresh basil leaves
- Lime wedges for serving
- Cooked jasmine rice for serving

Heat coconut oil in a large pot over medium heat. Add curry paste and cook for 1 minute until fragrant.
