Mediterranean Quinoa Salad

Ingredients
- 1 cup quinoa, rinsed
- 2 cups water
- 1 cucumber, diced
- 1 pint cherry tomatoes, halved
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/2 cup kalamata olives, pitted and halved
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste

In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed.

Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork and let cool.

In a large bowl, combine cooled quinoa, cucumber, tomatoes, bell pepper, red onion, olives, feta, parsley, and mint.

In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.

Pour dressing over salad and toss to combine.

Refrigerate for at least 30 minutes before serving to allow flavors to meld.
